It is with heavy hearts that we announce the passing of Leonor Yolanda Galindo, a beloved wife, mother, grandmother, and cherished member of the community, who departed this life peacefully on March 22, 2025, at the age of 79. Born on August 3, 1945, in Allende Coah, Mexico, Leonor dedicated herself to her family and her passions, leaving a legacy of love and warmth.
For 33 years, Leonor and her husband were the proud owners and operators of Galindo's Cafe in Charlotte, where her famous Carne Guizada and enchiladas drew patrons from near and far. Her tenacity and hard work embodied the spirit of a true entrepreneur, as she brought the vibrant flavors of Mexican cuisine to life with her incredible culinary skills. Leonor was not just a businesswoman; she was a nurturing soul who cherished her role as a loving mother and grandmother, showering her grandchildren with affection and indulging them in sweet treats.
Leonor had a zest for life that included traveling across the United States and Mexico, with every getaway igniting her spirit of adventure. She enjoyed the simple pleasures of life, from picnics by the river, exploring the stunning landscapes of Yellowstone, Colorado and Mt Rushmore. She loved spending time with her family and going to Disney with her grandkids while watching their faces light up with joy and excitement. Her love for the beach was only rivaled by her passion for cooking, with each meal she prepared filled with fresh and vibrant tastes that catered to the hearts of her loved ones.
Leonor's legacy will continue to be celebrated by her beloved husband, Luis Galindo, who stood by her side through all of life's journeys. She is survived by her children Dora G. (Vicente) Valero, Raul M. (Maria) Galindo, Gaspar M. (Mariela) Galindo, Baltazar M. (Claudia) Galindo, and Yolanda A. Galindo; siblings Oscar Maltos, Humberto Maltos, and Graciela M. Perez; grandchildren Raul E. Galindo, Luis A. Galindo, Abigail M. Galindo, Edgar A. Galindo, Gaspar A. Galindo, Angel G. Galindo, Adrian Galindo, Javier Galindo, Baltazar E. Galindo, Angela L. Galindo, Sebastian A. Galindo, Leonardo R. Galindo, Paul Sebastian Errisuriz, and Natalia Araceli Errisuriz; great-grandchildren Riley Rye, Bailey Rye, Raul R. Galindo, Alexandria Galindo, Luis Braulio Galindo, Joaquin V. Galindo, and Anastacio P. Lopez Jr; numerous nieces, nephews and other relatives. She will be profoundly missed by all who were fortunate enough to know her.
Visitation will be held on Friday, March 28, 2025 from 4:00 p.m. to 7:00 p.m. with a prayer service at 7:00 p.m. at Hurley Funeral Home. Funeral Service will be on Saturday, March 29, 2025 at 10:00 a.m. at 1st Baptist Church of Charlotte. She will be laid to rest at Chilipitin Cemetery.
As we remember Leonor, let us carry forward her spirit of love, resilience, and passion for life. Her memory will forever live on in our hearts and in the delicious meals that remind us of her remarkable journey, reminding us of the warmth, kindness, and care she wove into every moment of her life.
Leonor was preceded in death by: parents Humberto and Ernestina Maltos; son Agustin Galindo; grandson Vicente Valero III; and sister Delia M. Zamarripa.
